CLUB MORE THAN TRIPLES TRADE WITH NEW DINING PRECINCT

Revesby Workers’ Executive Chef Christopher McIntyre is excited about the club’s expansive new dining precinct that opened on 25 October.  Established with the community in mind, the precinct consists of the 460-seat indoor/outdoor Firestone Kitchen and Bar, plus a modern Vietnamese noodle bar called Aunty Eights.

And it certainly seems to have hit the mark with members and guests, with trade more than tripling since opening, according to Chef Christopher.

The idea was to bring all the food areas together in one location where diners can share meals in a communal way.  The design has also made it more effective for the back of house team to work together to deliver exceptional meals with fast friendly service.

The open plan kitchen of the adjoining restaurants creates theatre and emphasizes freshness.  Family style eating and share platters like the 48-hour slow cooked lamb shoulder, the 1.5kg whole snapper marinated in fennel, lime and coriander and the seafood platter, are clear favourites.

Another feature of the space are the copper beer tanks filled with “brewery fresh” and unpasteurised Calton Draught beer. Each tank is dated and the tanks cleared and refilled with specially trucked in beer every 14 days.  The result of the process is a smoother style of beer that’s fresh, crisp and light on the palette and is not over carbonated.  A similar system is in place at the Newtown Hotel and the Royal Oak in Double Bay in Sydney and Beer DeLuxe in Federation Square Melbourne.

Chef McIntyre has only been with Revesby Workers Club for three months, and comes on board with great credentials.  He’s had over 30 years experience in the industry and has just finished a two years stint at Atlantis, The Palm in Dubai – a massive 16,000 room five-star resort that boasts 23 restaurants (including two Michelin restaurants, and some 450 chefs. Chef Christopher has also worked at the five-star Palazzo Versace on the Gold Coast along with many other hotels, restaurants, clubs and resorts.

He will be heavily involved with the next stages of the Revesby Workers Dining story when they open their new modern Italian restaurant Bel Cebo on Valentines Day next year, followed by an exciting New York Style deli offering in May2017.
