THE WINSTON UNVEILS EPIC PALM SPRINGS INSPIRED TRANSFORMATION
The highly anticipated multi-million-dollar-renovation of The Winston is now complete, and the Nor-West community in Sydney can experience its stunning transformation. The launch of Cala, a Palm Springs inspired bistro and cocktail bar, joins Taffy’s, a retro sports bar, and an alfresco dining area designed for relaxed, stylish family socialising.
Cala’s mid-century design is a nod to the Santa Monica Hotel and Palm Springs featuring timber framing, pitched ceilings and bold retro graphic accents. With floor-to-ceiling glass walls that open onto an outdoor dining area, guests can enjoy cozy private nooks or host gatherings in cabanas. The outdoor space is enriched with natural materials, terracotta tones and lush greenery, creating a warm and inviting atmosphere.
The cocktail lounge, inspired by the peachy colours and curves of Palm Springs, welcomes guests with soft, blush pink hues and a reflective ceiling, creating an intimate space to unwind. Taffy’s the retro sports bar, blends nostalgia with comfort, featuring large TV screens, old-school memorabilia and a menu filled with crowd favourites like the must-try ‘Steak Sandwich’.
Cala, brings a fresh twist on local favourites with a menu shaped by the tastes of the Nor-West community. The menu features pub classics alongside an impressive wood-fired pizza selection, weekly specials and steaks straight from the grill. Many of the dishes are designed to be shared, either among friends over a long weekend lunch or with a loved one. From the shares menu highlights include: ‘Tempura Zucchini Flowers’ and ‘Grilled Half Shell Scallops’. On the more substantial side Cala dishes up standout signatures dishes including ‘Grilled Whole Lemon Sole with Rocket Tomato & Olive Salad, Sage Butter and Chips’.
The new cocktail lounge introduces a fresh and vibrant drinks menu, with highlights including seasonal flavoured margaritas, amaretto sours and a cocktail trolley with a selection of fruity mojitos muddled at the table. These creative cocktails are complemented by a selection of local craft beers and wines.
Publican Andrew Thomas is proud of the pub’s reimagined spaces and how they reflect the community’s preferences.

The Winston is hosting a range of exciting events leading into summer to solidify its status as a vibrant social hub in the Nor-West community. Guests can look forward to a Four Pillars Gin event, a celebration for Melbourne Cup, an Oatleys Wine Dinner, a Stone & Wood Dinner and bottomless brunches.
