MASTERCHEF TO OPEN HELLENIC HOTEL IN MELBOURNE

Renowned chef and TV personality George Calombaris is extending his portfolio of authentic-but-modern Greek food in the southern capital. This time, he’s taking his Greek tavern concept to beachside Williamstown, where he will open his first pub offering with the Hellenic Hotel on June 17.
Calombaris first opened his ‘Hellenic Republic’ eatery experience in 2008 with business partner and fellow chef Travis McAuley. The brand now boasts two venues, in Brunswick and Kew.
The new Greek-centric pub is located in the former Hobson’s Bay Hotel in Williamstown, west of Melbourne. March Studio has transformed the iconic pub building to reflect the new venue’s Greek leanings and seaside location
The Hellenic Hotel will continue the concept of traditional Greek food with a modern twist, in a relaxed, ‘taverna’ setting that includes a street level tavern serving ‘Gastro Greek’ food, first-floor public bar, veranda dining and takeaway options.
Guiding the Hotel’s Greek fare will be Josh Pelham, who has worked kitchens in The Press Club and The Square in London, and most recently Northcote’s Estelle.
To complete the Greek experience, the Hotel will offer at least 16 varieties of ouzo, and some of the best Hellenic wines intended to “offer an insight into the indigenous varieties and regions”.
