DAPTO LEAGUES OPENS THE MILL

Dapto Leagues highly anticipated new bar and dining space – The Mill – opened to members and the general public last week.

Renovations of Dapto Leagues commenced in May this year and have resulted in a multi-million-dollar state-of-the-art new bar and dining space opening to rave reviews yesterday. The Mill is an open space with tall windows, soaring ceilings and exposed bricks in a New York warehouse style designed to be full of light. The thoughtful design was implemented to encourage people to stay longer and enjoy more time together.

The name The Mill is based in history and celebrates Dapto’s proud heritage.  As many locals are aware Brownsville and the greater Dapto region originated in the 1830’s with a group of pioneers including George Brown who opened the first mill in 1839. Dapto Leagues’ present-day Mill reflects the modern industrial vision of the refurbishment while subtly borrowing from Dapto’s honest and community driven history. The space heavily draws on historic imagery interplaying with fun language and the reinvention of the eclectic pub yarn. Finally, as a nod to the history of Dapto Leagues as a sporting club, the vintage colour palette draws upon the past whilst remaining a modern, energetic interpretation.

The Mill’s menu has been carefully designed by internationally acclaimed Executive Chef, Donald Flanagan and includes all the favourites plus new classics. Exciting new additions to the open kitchen include a South American parrilla lava rock grill with churrasco rotisserie, an Italian stone fired pizza oven and multiple woks to help serve the new range of Asian fusion cuisine.

The Mill’s new menu comes accompanied by a selection of classic and signature cocktails, the country’s best wines, the world’s best spirits and multiple craft beers including The Mill’s own locally brewed “Two Tales” lager.
