MIAMI POOL CLUB MEETS URBAN WOOLLAHRA AT THE LIGHT BRIGADE

The Light Brigade is bringing a touch of Miami to its rooftop bar with a pastel colour palette and panoramic city views.

Situated four levels above the bustling streets of Woollahra, locals can enjoy a relaxed off-duty vibe with a wood-fire menu and signature cocktails.

Open from 12pm to midnight, sip a wide range of bespoke cocktails, from classics to Spritzes and jalapeño-infused gins. Expect delicious innovative twists on the classic Spritz with flavours like Limoncello, Aperol and Mediterranean gin. Spice is a theme among their signature cocktails with ‘Karakuchi Butterfly, jalapeno-infused Roku gin, St Germain elderflower liqueur, butterfly pea flower syrup, magic’ and ‘Chilli Watermelon Margarita, tequila, fresh watermelon, lime, chilli salt’.

The Light Brigade rooftop has an eclectic style menu, curated by Bayfield Hotel Group’s Executive Chef Justin Schott. Justin draws inspiration from playing with fire; from vegetables to meats, wood-fired cooking gives rich, robust flavours to pub classics.

UK born, Justin has worked with Mike McEnearney’s award winning restaurant, Kitchen by Mike and renowned Rockpool Bar & Grill.

Many of the dishes are designed to be shared, either among friends over a long weekend lunch or with a loved one during date night. From the shares menu highlights include: ‘Crispy Potato Gems’ and ‘Wood-Fired ‘‘Puff’’ Bread’ accompanied with a selection of antipasti like ‘roasted eggplant caponata & macadamia pesto’, ‘whipped buffalo ricotta’ and ‘house-made taramasalata with shallot oil and dill’.

On the more substantial side, Justin dishes up fresh takes on traditional pastas including: ‘Lamb pappardelle, braised lamb neck ragu, fresh pappardelle, gremolata and pecorino’ and ‘Potato & ricotta gnocchi, zucchini, seasonal greens, macadamia pesto, pea puree, goats curd, crispy basil’.

Naturally, pub classics will not disappoint with an impressive wood-fired pizza selection, weekly special burgers and of course a crowd pleasing schnitty.

The seasonally driven rotating specials will see pub food being taken up a notch by focusing on premium produce including: ‘Mirin-brined salmon sashimi poke bowl’.

Designer Kristy McGregor, responsible for The Manly Wharf Hotel, was inspired by the ‘pastel pinks, greens and terracotta tones of the pool club at the Goodtime Hotel in Miami’. She wished to ‘respect the historical elements of the iconic art deco red brick and create a cosy yet socially exciting space through luxurious contemporary outdoor furniture and finishes that have a texture and a warmth’.
