TRY SOMETHING DIFFERENT AT THE TILBURY HOTEL
NSW’s finest Sydney Rock Oyster farms and vineyards are being celebrated in Woolloomooloo this Spring at The Tilbury’s Oyster Harvest Series every Tuesday, from October 18th through to November 22nd.
Over five successive Tuesday nights, The Tilbury will showcase a rotation of the unique flavour signatures of the different Sydney Rock Oyster regions, with each oyster variety paired with their ideal wine match from different winemakers.
Each week during the Oyster Harvest Series, a trio of oysters will be presented to guests along with a regional wine, which can be enjoyed together for just $30. Guests will meet with oyster farmers and winemakers, along with The Tilbury’s Head Chef Darrell Felstead, all of whom will be on hand every Tuesday to introduce the different flavour profiles of the oysters and wines, explaining the unique conditions and environments in which they thrive.
Highly experienced East 33 farmer Brad Verdich will attend each of the five Spring Oyster Series evenings, sharing firsthand his knowledge on how the flavours of different oysters reflect the surroundings they mature in. East 33 is a group of Australia’s leading oyster producers, their farms are located in the most pristine areas all along the NSW coastline.
Series Launch: Oyster & Champagne Dinner, Tuesday 18th October – 149° Series + Laurent-Perrier La Cuvee Champagne $149
Guests can enjoy a trio of East 33’s most Southern region oysters at the launch, known as the 149° Series. These are grown in Merimbula, Pamula and Wapeng, and will be paired with a flute of Laurent-Perrier La Cuvée Champagne, known for its purity and freshness. Characterised by rich flavours, oysters from the 149° Series offer a full, velvety bite with earthy notes and light minerality.
On this evening the oysters and champagne will be followed by a three-course meal, created by The Tilbury’s Head Chef, Darrell Felstead. Each dish will be paired with wines personally matched by Coppabella’s talented Winemaker Paul Roberts. Roberts and Felstead, along with East 33’s Brad Verdich, will all be on hand to discuss the inspiration for the new menu dishes, the wine and of course the oysters.
The dinner will feature highlights from The Tilbury’s new Spring Menu, including a starter of delectable Shitake Arancini with miso, seaweed, porcini powder and wasabi mayonnaise; along with mains of Roasted Snapper with XO mussels and kale seasoned with fennel and 12 hour Slow-cooked Whole Lamb Shoulder with Asian chimichurri and smoked salt.
Tuesday 25th October – 149° Series – $30
The rich and velvety 149° Series oysters will this week be matched with wines from Cuttings Wines Coppabella Estate, located in the foothills of the famed Snowy Mountains, along with those from Moppity Vineyards which is situated close to Young in Southern NSW. Winemaker Paul Roberts will again be available on the night, along with East 33’s Brad Verdich to discuss the oyster and wine duos.
Tuesday November 8th – The 152° Series – $30
The oyster journey continues up the NSW coast to farms from the Central and Mid-North Coast, which produce the 152° Series, characterised by their creamy body, a lasting sweetness and subtle salinity. Special Guest Winemakers David & Sherry Hook, from David Hook Wines in the Hunter Valley, will be presenting their ideal wine pairings for the 152° Series on the 8th along with East 33’s Brad Verdich.
Tuesday 15th November – The 154° Series – $30
As we head further north on our oyster discovery adventure we reach the Northern region of NSW across areas of the Hastings River, Camden Haven and Nambucca where East 33’s 154° Series is found. The 154° Series is defined by a sharp bite with higher levels of umami, salinity and minerality giving them a dryer finish and deeply complex flavour.
Special guest winemaker Andy Coppard from Lino Ramble wines, produced in South Australia’s McLaren Vale, will be taking to the floor with Verdich this week to present the perfect Sydney Rock and Lino Ramble match.
Tuesday 22nd November – The 154° Series – $30
The final stop on this oyster journey again celebrates the 154° Series, this time with the Hunter Valley’s Mike de Iuliis making a guest appearance to unveil his dream wine pairings for this complex oyster, with Verdich ready to answer any questions guests may have.
